Farm
The estates of the farm extend over an area of 30 hectares, in 2 buildings located in the municipalities of Torbiato, Adro and Cortefranca. The morainic hills of lake Sebino, which slope gently towards the Po Valley, offer here a basin well exposed to the sun, mitigated by the nearby lake and protected by the Alps, particularly favorable for the cultivation of vines and olives. 28 hectares are now used as vineyards, in the variety of Chardonnay, Pinot Bianco, Pinot Nero, Cabernet Sauvignon, Cabernet Franc, Nebbiolo and Merlot vines. The remaining land is used for hay-making for breeding and for vegetables and fruit trees for family use and for the Solive farmhouse. 2000 olive trees are planted on the headlands and districts. A large part of seasonal fruits and vegetables, served at the Solive farmhouse, are home-grown. In a cottage surrounded by vineyards, on the edge of the large courtyard garden of the farm, there is the little one peasant museum. The family collection, collected over the years with loving care, includes countless vintage agricultural tools and machinery. Among the various pieces that cannot be found today, the “Locomobile”, the first Landini engine, stands out above all.
Farm
All the beef and pork and some cured meats served at the farm come from the breeding of Cascina Bariselli, where they are periodically slaughtered. A careful selection of native breeds is bred in compliance with traditional, healthy and natural zootechnical methods. From the Bariselli home, a real cult for meat has counted over time countless quality awards and recognitions.
Acknowledgments
For about 80 years the prestige of the farms in Franciacorta di "Top quality beef" it is linked to the name of the Bariselli family. Since 1927, countless are the awards collected at each trade fair participation, not only locally. The cattle, cared for and fed respecting local traditions and strictly controlled at every stage of growth, as well as being offered to the market, contribute substantially to the commissions of the Solive farmhouse. The Solive restaurant is in fact also renowned for the possibility of tasting an excellent quality of the true traditional recipe of Beef in Oil.
